We don’t just give you a holiday where you can immerse yourselves in nature, in a region that is still uncontaminated, rich with enchanting scenery, and people-friendly; we also work hard to preserve and protect this environment as much as possible.

Our efforts are the fruit of a centuries-old farming culture, which is deeply rooted in the land, water, meadows and woods. We treasure the wisdom that has been handed down to us by our ancestors, teaching us how to use our resources sparingly, without taking more than what is necessary and never wasting anything. As we did in the past, today we also believe that the only real wealth that we possess is our special territory, and it is our duty to preserve it for future generations.

With this in mind, we have taken part in a number of important initiatives. These include joining the Ecoristorazione (Ecocatering) Trentino project and becoming certified under its trademark. What’s more, we will soon be awarded the EU Ecolabel, which testifies to our commitment to the environment.

However, the most challenging project has been replacing our oil-based boiler with a state-of-the-art wood chip heater. This is a real example of district heating with a number of surrounding buildings also connected to it.

We do not think it is necessary to stop and talk to you about how important it is to use eco compatible and renewable resources, as we hope that by now this is obvious to everybody. Instead, we prefer to do something important; it may just be a small step, but we think it is a necessary one.

We are already on our way, and we ask you to come and help us. They may only be small daily gestures, but this does not mean that they are any less important: separating waste, which we have tried to make as easy as possible, using water wisely, both hot and cold, turning off unused lights, managing towels carefully, and eating dishes from our menus that have been created using locally sourced ingredients from around Trentino.
